Chops & Beans

Another good meal from the cookbook. Now if and when I have cooked Chops in the past, I can't say I have ever paired them with beans. But this recipe kinda made them have a Barbeque~y taste.
I have a lot of cookbooks, & in recent weeks when I emptied up my boxes from storage, found I have a sort of collection. Which is rather odd as I don't usually go by a recipe, I like to make things up as I go along, and sorta wing it and add ingredients all willy nilly. So I do believe other than trying a new recipe for the first time, this is the first time I have ever gone for weeks using recipes to cook my evening meals. I am surprised and actually loving it. I am finding that I don't use as much ingredients(which is good, hence diabetic cookbook) but I also am not throwing anything out. So I am thinking the diabetic dude and Homie are loving it also.

Chops & Beans

The only thing I did in this recipe different is not use as many chops or beans as it called for as I didn't have that many on hand...but for 3 it was perfect and all we had leftover was a bowl of beans which Homie gladly consumed the next day for lunch.

6 Chops ( I used 4 and boneless)
2 1 lb. cans of Pork and Beans ( I used one can)
1/4 cup of ketchup
2 slices of bacon, browned, crumbled
1/2 cup chopped onions sauteed
1 tbsp. Worcestershire
1 tbsp. Brown Sugar
2 tsp. mustard
1 tbsp. brown sugar
2 tbsp. ketchup
1 lemon (I didn't use the lemon either)
Combine beans, 1st round of ketchup, bacon, onions, Worcestershire, brown sugar into crock pot. Brown Chops in skillet, separately add rest of ingredients together and brush onto each chop before submerging into beans. Cook for approx. 4-6 hours, this time depends on whether you cook on high or low and how many chops you had I am sure, as I only cooked this for 3 hours and it was perfect. Homie usually chokes on chops and he ate 2 of the 4 Chops I cooked in this as they were so tender, they just about melted in your mouth.

This as with most of the recipes I am finding in this cookbook are very delicious. They were sounding too good to be true and I was hesitant after a couple to whether I was doing Shankster a disservice or not. But after his Levels have consistantly went down, and we got a big thumbs up from the Doc after only 3 weeks, I think its time I tooted my horn.
